Cave Tastings 2026

Go behind the scenes where the magic happens at our Winery & Vineyard in Peru, Illinois.

Step inside our working winery caves—built into the hillside—and experience where August Hill & Illinois Sparkling Co. wines are crafted and aged. This guided tasting offers a unique, behind-the-scenes look at our winemaking process in a space not every guest gets to explore.

Enjoy a curated tasting of six wines, hand-selected by our team to showcase a range of styles from both August Hill and ISC. Along the way, you’ll learn more about our wines, our process, and what makes our caves an important part of the journey from grape to glass.

This intimate experience is designed for small groups (up to 20 guests) and lasts approximately 45 minutes. Each guest will receive a signature tasting glass to take home.

$30 per person
$20 for Insider Wine Club Members (limit 2 discounted tickets per day)

Cave Tastings are offered every Saturday & Sunday:
Saturdays: 12 pm, 2 pm, 4 pm 
Sundays: 12 pm, 2 pm, 4 pm
Note: The June 6, 12 pm tasting is a special Sparkling Cave Tasting.

Online ticket sales close 2 hours prior to each tasting. Limited walk-in reservations may be available—please call 815-200-5067 during Wine on the Hill hours for availability.

Join us for a special Sparkling Cave Tasting presented by Winemaker Mark Wenzel (aka “Bubbly Wenzel”), featuring a deeper dive into our Illinois Sparkling Co. wines and the Traditional Method. Additional dates may be announced throughout the season—stay tuned!

Important Information

• Please do not pre-order wine with your ticket—our system does not support it. Wine will be available for purchase when you arrive.
• Your confirmation email will include directions and additional details. If reserving for others, please forward this information to your group.
• This event takes place at our Winery & Vineyard location (21N 2551st Rd, Peru, IL)—not our Tasting Room in Utica.
• Guests must be 21+ to consume alcohol.
• Children are not permitted in the tasting cave. Please ensure supervision outside the cave during your tasting.
• Dogs are not allowed in the winery. If visiting Wine on the Hill with a dog, please have someone available to watch them during your tasting.
